1 ½ cups brown sugar, packed

2 large eggs

1 teaspoon vanilla extract

Zest of 1 lemon

2 tablespoons fresh lemon juice

2 cups all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup fresh strawberries, diced (plus extra for topping)

½ cup white chocolate chips (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease or line a 9x9 inch baking pan with parchment paper.

    Mix Wet Ingredients: In a large mixing bowl, combine the melted butter and brown sugar. Mix until well combined and smooth. Add in the eggs, vanilla extract, lemon zest, and lemon juice. Stir until the mixture is creamy.

      Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.

        Combine Wet and Dry Mixtures: Gradually fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix.

          Fold in Strawberries and Optional Chips: Gently fold in the diced strawberries and white chocolate chips, if using, until evenly distributed.
