Crunchy Sesame Garlic Edamame

2 cups edamame in pods (fresh or frozen)

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon soy sauce (or tamari for gluten-free)

1 tablespoon rice vinegar

2 tablespoons sesame seeds (white and/or black)

1 teaspoon red pepper flakes (adjust to taste)

1 teaspoon sea salt (adjust to taste)

1 tablespoon chopped green onions (for garnish)

Optional: zest of 1 lemon for a fresh finish

Instructions
 

Prepare the Edamame: If using frozen edamame, place them in a pot of boiling water for 5 minutes. If using fresh, steam them until vibrant green and tender, about 4-5 minutes. Drain and set aside to cool slightly.

    Make the Garlic Sauce: In a large skillet over medium heat, add the sesame oil. Once heated, add the minced garlic and sauté for 1-2 minutes until fragrant, making sure not to let it burn.

      Add Flavors: Stir in the soy sauce, rice vinegar, red pepper flakes, and sea salt. Let it cook together for another minute to meld the flavors.

        Combine Edamame with Sauce: Add the cooked edamame to the skillet. Toss well to coat in the garlic sauce, cooking for another 3-4 minutes until the edamame is heated through and slightly crispy.

          Add Crunch: Stir in the sesame seeds, mixing well to ensure that every pod is coated with the delicious garlicky sauce and sesame goodness.

            Serve: Remove from heat. For an extra touch, sprinkle with chopped green onions and lemon zest before serving. Enjoy warm or at room temperature!
