Cherry Pie Crumble Bars

2 cups fresh or frozen cherries, pitted and halved

1 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/4 teaspoon almond extract (optional)

For the Crust and Topping:

1 1/2 cups all-purpose flour

1/2 cup rolled oats

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1/2 teaspoon cinnamon (optional)

Instructions
 

Prepare the Cherry Filling: In a medium saucepan over medium heat, combine the cherries, sugar, cornstarch, lemon juice, vanilla extract, and almond extract. Stir until well combined. Cook for about 5-7 minutes until the mixture thickens and starts to bubble. Remove from heat and let it cool.

    Prepare the Crust and Topping:

      a. Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper.

        b. In a large bowl, mix together the flour, rolled oats, brown sugar, baking powder, salt, and cinnamon until thoroughly combined.

          c. Pour in the melted butter and mix until the mixture is crumbly and holds together when pressed.

            Assemble the Bars:

              a. Press half of the crust mixture into the bottom of the prepared baking dish, creating an even layer.

                b. Pour the cooled cherry filling over the crust, spreading it out evenly.

                  c. Sprinkle the remaining crust mixture over the cherry filling, covering it completely.

                    Bake: Bake in the preheated oven for 30-35 minutes, or until the topping is golden brown.

                      Cool and Serve: Allow the bars to cool in the baking dish for at least 10 minutes, then transfer them to a wire rack to cool completely. Once cooled, cut into squares and serve.
