Zucchini Tomato Feta Bake

4 medium zucchinis, sliced into thin rounds

2 large ripe tomatoes, diced

1 cup crumbled feta cheese

1 cup shredded mozzarella cheese

3 cloves garlic, minced

1 small onion, finely chopped

1 teaspoon dried oregano

1 teaspoon dried basil

1/2 teaspoon red pepper flakes (optional)

3 tablespoons olive oil

Salt and pepper to taste

Fresh basil leaves, for garnish

Preheat Oven: Preheat your oven to 375°F (190°C).

    Prepare the Vegetables: In a large bowl, combine the sliced zucchinis, diced tomatoes, minced garlic, and chopped onion. Drizzle with olive oil and season with salt, pepper, oregano, basil, and red pepper flakes. Toss until the vegetables are well coated.

      Layer the Veggies: In a greased 9x13 inch baking dish, layer half of the zucchini and tomato mixture on the bottom. Sprinkle half of the crumbled feta cheese over this layer.

        Create Another Layer: Add the remaining zucchini and tomato mixture on top, followed by the second half of the feta cheese. Top with the shredded mozzarella cheese for a delightful melty finish.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Then, remove the foil and bake for an additional 15-20 minutes or until the cheese is bubbly and golden.
