4 medium zucchinis, grated

2 large eggs

1 cup all-purpose flour

1 cup milk

1 cup grated Parmesan cheese

1 teaspoon baking powder

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil (for greasing)

Optional: fresh basil leaves, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C) and grease a 9x13 inch baking dish with olive oil.

    Prepare the Zucchini: In a large bowl, grate the zucchini. Use a clean dish towel or cheesecloth to squeeze out excess moisture from the zucchini. This helps prevent a watery scarpaccia.

      Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, salt, and black pepper.

        Combine Wet Ingredients: In another bowl, beat the eggs and then slowly add the milk. Mix well until combined.

          Combine Everything: Gradually add the dry ingredients to the wet ingredients, stirring until smooth. Fold in the grated zucchini and Parmesan cheese until evenly distributed. Lastly, incorporate the freshly chopped parsley for an added flavor kick.

            Transfer to Baking Dish: Pour the mixture into the greased baking dish, spreading it out evenly.
