2 medium zucchinis

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup fresh basil, chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon red pepper flakes (optional)

1 cup marinara sauce (for serving)

Olive oil, for brushing

Instructions
 

Prepare the Zucchini:

    - Preheat your oven to 400°F (200°C).

      - Slice the zucchinis into thin, even-length strips using a mandoline or sharp knife. Aim for about 1/8-inch thickness.

        - Lay the zucchini strips out on a clean kitchen towel and sprinkle lightly with salt. Let them sit for about 10-15 minutes to draw out excess moisture.

          Make the Filling:

            - In a mixing bowl, combine the ricotta cheese, grated Parmesan, chopped basil, minced garlic, salt, black pepper, and red pepper flakes if using. Mix until smooth and well combined.

              Assemble the Pinwheels:

                - Pat the zucchini strips dry with another clean towel to remove excess salt and moisture.

                  - Lay a zucchini strip flat on your work surface. Spoon about a tablespoon of the ricotta mixture at one end of the strip.

                    - Gently roll the zucchini strip over the filling to create a pinwheel. Repeat this process for all the zucchini strips and filling.

                      Bake the Pinwheels:

                        - Place the pinwheels seam-side down on a baking sheet lined with parchment paper. Brush lightly with olive oil.

                          - Bake in the preheated oven for 15-20 minutes, or until the zucchini is tender and the filling is slightly golden.

                            Serve:

                              - While the pinwheels are baking, warm the marinara sauce in a small saucepan.

                                - Once baked, remove the pinwheels from the oven and let them cool for a couple of minutes.

                                  - Serve warm, drizzled with marinara sauce, and garnished with additional fresh basil if desired.
