Zucchini Ribbon Salad

Ingredients
  

2 medium zucchini

1 medium yellow squash

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

1/4 cup feta cheese, crumbled

1/4 cup fresh mint leaves, chopped

1/4 cup olive oil

Juice of 1 large lemon

Juice of 1 lime

Zest of 1 lemon

Salt and pepper, to taste

Instructions
 

Prepare the Zucchini and Squash:

    Wash the zucchini and yellow squash thoroughly. Using a vegetable peeler or spiralizer, create long ribbons from both vegetables. Continue until you’ve processed the entire zucchini and squash. Place the ribbons in a large bowl.

      Add Vegetables:

        To the bowl of zucchini ribbons, add the halved cherry tomatoes and thinly sliced red onion. Toss gently to combine.

          Make the Dressing:

            In a small mixing bowl, whisk together the olive oil, lemon juice, lime juice, lemon zest, salt, and pepper until well combined.

              Combine Salad and Dressing:

                Pour the citrus dressing over the zucchini mixture and toss to coat evenly. Allow the salad to rest for about 10 minutes to let the flavors meld.

                  Add Mint and Feta:

                    Just before serving, stir in the chopped mint leaves and crumbled feta cheese for a burst of flavor and texture.

                      Serve:

                        Transfer the salad to a serving platter or bowls. Garnish with additional mint leaves and feta, if desired. Enjoy chilled or at room temperature!
