Ingredients

1 pre-made pie crust (store-bought or homemade)

2 medium zucchinis, thinly sliced

1 cup fresh basil leaves, chopped

1 small onion, finely chopped

3 cloves garlic, minced

4 large eggs

1 cup heavy cream

1 cup shredded Gruyère cheese (or cheese of your choice)

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

Olive oil for sautéing

Extra basil leaves for garnish (optional)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

Sauté the Vegetables: In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the chopped onions and garlic, sautéing until fragrant and the onions are translucent, about 3-4 minutes.

Cook the Zucchini: Add the sliced zucchini to the skillet. Sauté for another 5-7 minutes until the zucchini is tender and any excess moisture has evaporated. Stir in the chopped basil, seasoning with salt, pepper, and nutmeg. Cook for an additional 2 minutes, then remove from heat and let cool slightly.

Prepare the Filling: In a mixing bowl, whisk together the eggs and heavy cream until well combined. Stir in the shredded Gruyère cheese.

Combine Mixture: Fold the sautéed zucchini mixture into the egg and cheese mixture until evenly distributed.

Assemble the Quiche: Place the pie crust in a 9-inch pie dish. Pour the zucchini and egg mixture into the crust, spreading it out evenly with a spatula.

Bake the Quiche: Place the quiche in the preheated oven and bake for 35-40 minutes, or until the filling is set and slightly puffed. A knife inserted into the center should come out clean.

Cool and Serve: Once baked, remove from the oven and let it cool for about 10 minutes. Garnish with extra basil leaves if desired. Slice and serve warm or at room temperature.
