2 medium zucchinis

1 cup breadcrumbs (preferably panko for extra crunch)

1/2 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1 tsp Italian seasoning

1/2 tsp salt

1/4 tsp black pepper

2 large eggs

1 cup all-purpose flour

1/2 cup marinara sauce (for dipping)

Olive oil spray (or vegetable oil for frying)

Instructions
 

Prep the Zucchini: Preheat your oven to 400°F (200°C). Wash the zucchinis and slice them into thick rounds, approximately 1-inch thick.

    Create the Breading Station: In three separate bowls, set up your breading station. In the first bowl, place the all-purpose flour. In the second bowl, crack the eggs and whisk them together. In the third bowl, combine the breadcrumbs, Parmesan cheese, garlic powder, onion powder, Italian seasoning, salt, and pepper.

      Bread the Zucchini: Dip each zucchini round into the flour, ensuring it's fully coated, then shake off any excess. Next, dip it into the egg mixture, allowing any excess to drip off, and finally, coat it generously with the breadcrumb mixture. Press down lightly to ensure the breadcrumbs stick.

        Arrange & Spray: Place the breaded zucchini rounds on a baking sheet lined with parchment paper. Once all are breaded, spray them lightly with olive oil or vegetable oil to help them crisp up in the oven.

          Bake: Bake in the preheated oven for about 20-25 minutes, or until the zucchini poppers are golden brown and crispy on the outside. Flip them halfway through to ensure even cooking.

            Serve: Remove from the oven and let them cool for a couple of minutes. Serve hot with marinara sauce on the side for dipping, and enjoy your delightful Zucchini Parmesan Poppers!
