2 medium zucchinis

1 cup shredded cheddar cheese

1 cup black beans (cooked or canned, rinsed and drained)

1 cup cherry tomatoes, halved

1/2 cup diced red onion

1 jalapeño, sliced (optional for heat)

1/2 cup Greek yogurt or sour cream

1/4 cup fresh cilantro, chopped

1 tsp chili powder

1 tsp cumin

1/2 tsp garlic powder

Salt and pepper, to taste

Olive oil, for drizzling

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Slice the Zucchini: Wash the zucchinis and slice them into thin rounds (about 1/4 inch thick). For a more nacho-like effect, you can also cut them into thin wedges.

      Season the Zucchini: In a bowl, toss the zucchini slices with olive oil, salt, pepper, chili powder, cumin, and garlic powder until well-coated.

        Arrange on a Baking Sheet: Lay the seasoned zucchini slices flat on a parchment-lined baking sheet in a single layer, making sure they don’t overlap.

          Bake the Zucchini: Bake in the preheated oven for 15-20 minutes, or until they are golden and slightly crispy. Flip them halfway through for even cooking.

            Layer the Toppings: Once the zucchini is done, remove it from the oven and sprinkle black beans over the top. Follow with shredded cheddar cheese, cherry tomatoes, red onion, and jalapeño slices.

              Bake Again: Return the loaded zucchini nachos to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

                Garnish and Serve: Once out of the oven, sprinkle with fresh cilantro. Serve immediately with a dollop of Greek yogurt or sour cream on the side, allowing everyone to add as much as they like.
