2 medium zucchinis, grated (about 2 cups)

1 teaspoon salt

1/2 cup all-purpose flour (or substitute with almond flour for a gluten-free option)

1/4 cup grated Parmesan cheese

1 large egg

1/4 cup chopped green onions (scallions)

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika (optional)

1/4 cup fresh parsley, chopped (or dill for a twist)

Olive oil, for frying

Sour cream or Greek yogurt, for serving

Prepare the Zucchini: Start by grating the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel or cheesecloth, and sprinkle with salt. Let it sit for about 10 minutes to draw out excess moisture. After 10 minutes, squeeze the zucchini to remove as much water as possible.

    Mix Ingredients: In a large bowl, combine the drained zucchini, flour, Parmesan, egg, green onions, minced garlic, black pepper, smoked paprika (if using), and chopped parsley. Stir until well combined. The mixture should hold together; if too wet, add a bit more flour.

      Heat the Oil: In a large skillet, heat about 2 tablespoons of olive oil over medium heat. You want enough oil to cover the bottom of the skillet for frying.

        Form and Fry Fritters: Once the oil is hot, scoop about 2 tablespoons of the zucchini mixture and shape it into a small patty. Carefully place it in the skillet.
