12 large portobello mushrooms, stems removed

1 medium zucchini, finely diced

1 cup feta cheese, crumbled

1/2 cup breadcrumbs (or gluten-free breadcrumbs)

1/4 cup fresh parsley, chopped

2 cloves garlic, minced

1/4 teaspoon red pepper flakes (optional)

1 tablespoon olive oil

Salt and pepper to taste

1 tablespoon lemon juice

1/4 teaspoon dried oregano

Instructions
 

Preheat and Prepare: Preheat your oven to 375°F (190°C). Lightly grease a baking dish with olive oil.

    Sauté the Zucchini: In a skillet over medium heat, add the olive oil. Once hot, add the diced zucchini and sauté for about 5-7 minutes until slightly softened. Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Mix the Stuffing Mixture: In a large mixing bowl, combine the sautéed zucchini and garlic with feta cheese, breadcrumbs, chopped parsley, lemon juice, dried oregano, red pepper flakes (if using), salt, and pepper. Mix until well combined.

        Stuff the Mushrooms: Spoon the filling into each portobello mushroom cap, pressing gently to pack it in and creating a nice mound on top.
