Zucchini Feta Pasta Bake

2 medium zucchinis, diced

300g (10.5 oz) pasta (penne or fusilli works best)

250g (9 oz) crumbled feta cheese

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

1 medium onion, finely diced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

1/2 cup grated mozzarella cheese (for topping)

1/4 cup fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.

      Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté for about 3-4 minutes until translucent. Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

        Add Zucchini and Spinach: Add the diced zucchinis to the skillet and cook for about 5-6 minutes until they start to soften. Then, add the chopped spinach and sauté until wilted. Season with oregano, basil, salt, and pepper.

          Combine Ingredients: In a large mixing bowl, combine the cooked pasta, sautéed vegetables, cherry tomatoes, and crumbled feta cheese. Mix well to combine all ingredients evenly.

            Transfer to Baking Dish: Pour the mixture into a greased 9x13 inch (23x33 cm) baking dish. Spread it out evenly, ensuring the feta is distributed throughout.

              Add Mozzarella Topping: Sprinkle the grated mozzarella cheese evenly over the top of the pasta bake.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden brown.

                  Serve: Once baked, remove from the oven and let it sit for about 5-10 minutes. Garnish with fresh basil leaves before serving.
