2 medium zucchinis, grated and excess moisture squeezed out

1 cup rolled oats

1 cup whole wheat flour

½ cup brown sugar

½ cup granulated sugar

1 tsp baking soda

1 tsp ground cinnamon

½ tsp salt

½ cup unsweetened applesauce

½ cup coconut oil, melted (or vegetable oil)

2 large eggs

1 tsp vanilla extract

1 cup chocolate chips (dark or semi-sweet)

½ cup chopped walnuts (optional)

½ cup raisins or dried cranberries (optional)

Instructions
 

Preheat the oven to 350°F (175°C). Grease a 9x13-inch casserole dish or line it with parchment paper.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and twist to remove excess moisture. This step is crucial to avoid soggy cookies.

      Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, whole wheat flour, brown sugar, granulated sugar, baking soda, cinnamon, and salt. Stir until evenly mixed.
