2 medium zucchini, grated

3 tablespoons unsalted butter, softened

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon fresh lemon juice

1/4 cup grated Parmesan cheese

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

1/4 teaspoon red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Begin by grating the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture.

    In a skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, until fragrant but not browned.

      Add the grated zucchini to the skillet and cook for 5-7 minutes, stirring occasionally, until the zucchini is tender and any remaining moisture has evaporated.
