Zucchini Broccoli Tots

Ingredients
  

2 medium zucchinis, grated

1 cup broccoli florets, finely chopped

1 cup shredded cheddar cheese

1/2 cup breadcrumbs (Panko works great for extra crunch)

1/4 cup grated Parmesan cheese

2 large eggs

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

Olive oil spray (for baking)

Instructions
 

Preheat the oven: Start by preheating your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup.

    Prepare the vegetables: Grate the zucchinis using a box grater and place them in a clean dish towel. Squeeze out excess moisture. Chop the broccoli florets into very small pieces.

      Mix the ingredients: In a large mixing bowl, combine the grated zucchini, chopped broccoli, cheddar cheese, breadcrumbs, Parmesan cheese, eggs, minced garlic, onion powder, oregano, salt, and pepper. Stir until all ingredients are fully incorporated and the mixture is well combined.

        Form the tots: Using your hands, scoop out about 1 to 2 tablespoons of the mixture and shape them into small oval tots. Place them on the prepared baking sheet, leaving space between each tot.

          Bake: Lightly spray the tops of the tots with olive oil. Bake in the preheated oven for about 20-25 minutes, or until they are golden brown and crispy around the edges.

            Serve: Remove from the oven, allow to cool for a few minutes, and then serve warm with your favorite dipping sauce, such as ranch or sriracha mayo.
