4 medium zucchinis

1 pound ground turkey

1 cup diced tomatoes (canned or fresh)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup cooked quinoa (or rice)

1 teaspoon Italian seasoning

1/2 teaspoon paprika

Salt and pepper to taste

1 cup shredded mozzarella cheese

Fresh basil leaves for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Zucchini: Wash the zucchinis and slice them in half lengthwise. Scoop out the seeds with a teaspoon to create boats, leaving about a 1/4-inch border.

      Cook the Filling: In a large skillet over medium heat, add a drizzle of olive oil. Sauté the chopped onion until translucent (about 3-4 minutes). Add the minced garlic and ground turkey, breaking it apart with a wooden spoon. Cook until the turkey is browned and cooked through.

        Mix in Ingredients: Stir in the diced tomatoes, cooked quinoa, Italian seasoning, paprika, salt, and pepper. Cook for an additional 5 minutes, allowing the flavors to meld.

          Stuff the Zucchini: Place the zucchini halves in a baking dish and fill each with the turkey mixture, pressing down gently.

            Add Cheese: Sprinkle shredded mozzarella evenly over the stuffed zucchini.

              Bake: Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, until the cheese is bubbly and slightly golden.

                Garnish and Serve: Once done, remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves before serving.
