Ingredients

2 medium zucchinis, grated

1 cup breadcrumbs (preferably panko for extra crunch)

½ cup grated Parmesan cheese

1 large egg

1 teaspoon garlic powder

1 teaspoon Italian seasoning

½ teaspoon salt

½ teaspoon black pepper

Vegetable oil (for frying)

For the Marinara Dip:

1 cup marinara sauce

1 teaspoon dried oregano

1 clove garlic, minced

Pinch of red pepper flakes (optional)

Instructions

Prepare the Zucchini: Begin by grating the zucchinis using a box grater. Place the grated zucchini in a clean kitchen towel and squeeze out excess moisture. This step is crucial to ensure your bites are not soggy.

Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, breadcrumbs, Parmesan cheese, egg, garlic powder, Italian seasoning, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Form the Bites: Using your hands, form small patties or bites (about 1.5 inches) from the mixture and place them on a baking sheet lined with parchment paper. You should have around 12-15 bites.

Heat the Oil: In a large skillet, pour enough vegetable oil to cover the bottom of the pan and heat it over medium heat until shimmering.

Fry the Bites: Carefully add a few zucchini bites to the hot oil, ensuring not to overcrowd the pan. Fry for about 3-4 minutes on each side, or until they are golden brown and crispy. Transfer the cooked bites to a paper towel-lined plate to soak up any excess oil. Repeat with the remaining bites.

Prepare the Marinara Dip: In a small saucepan over medium heat, combine the marinara sauce, dried oregano, minced garlic, and red pepper flakes if using. Stir and let it simmer for about 5 minutes to infuse the flavors.

Serve: Arrange the crispy zucchini bites on a plate with a bowl of warm marinara dip in the center. Garnish with extra grated Parmesan, fresh basil, or parsley if desired.
