1 lb salmon fillets, skinless, cut into 1-inch cubes

1 large orange, zested and juiced

2 tablespoons fresh ginger, grated

2 tablespoons soy sauce

1 tablespoon honey or maple syrup

1 tablespoon olive oil

2 cloves garlic, minced

1 teaspoon sesame oil

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 medium zucchini, sliced into thick rounds

1 cup cherry tomatoes

Fresh cilantro or green onions, for garnish

Bamboo or metal skewers

Instructions
 

Marinate the Salmon: In a medium bowl, mix orange juice, orange zest, grated ginger, soy sauce, honey, olive oil, minced garlic, and sesame oil. Season with salt and pepper. Add salmon cubes to the marinade, making sure they are well-coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a stronger flavor.

    Prepare the Vegetables: While the salmon is marinating, prepare the vegetables. Cut the red bell pepper, zucchini, and halve the cherry tomatoes if desired.

      Assemble the Skewers: If using bamboo skewers, soak them in water for 20-30 minutes to prevent burning. After marinating, thread the salmon cubes and the prepared vegetables onto the skewers, alternating between salmon and vegetables.

        Grill the Skewers: Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking. Place the skewers on the grill and cook for 3-4 minutes on each side until the salmon is opaque and flakes easily with a fork. The vegetables should also be slightly charred and tender.

          Serve: Once cooked, remove the skewers from the grill. Garnish with fresh cilantro or green onions. Serve immediately with extra orange wedges or your favorite dipping sauce.
