1 lb (450g) fresh salmon fillet, skin removed and cut into 1-inch cubes

2 large oranges (zest and juice)

2 tbsp fresh ginger, minced

3 garlic cloves, minced

3 tbsp soy sauce

2 tbsp honey or maple syrup

1 tbsp sesame oil

1 tsp red pepper flakes (adjust to taste)

1 red bell pepper, cut into 1-inch cubes

1 green bell pepper, cut into 1-inch cubes

1 small red onion, cut into wedges

Fresh cilantro leaves for garnish

Skewers (metal or soaked wooden skewers)

Instructions
 

Prepare the Marinade: In a medium bowl, combine the zest and juice of the oranges, minced ginger, minced garlic, soy sauce, honey or maple syrup, sesame oil, and red pepper flakes. Whisk until well combined.

    Marinate the Salmon: Place the salmon cubes in a resealable plastic bag or shallow dish and pour half of the marinade over the salmon. Seal the bag or cover the dish, ensuring the salmon is well coated. Refrigerate for 30 minutes to 1 hour, allowing the flavors to infuse.

      Prepare the Vegetables: While the salmon is marinating, prepare the bell peppers and red onion by placing them in a bowl. Drizzle with the remaining marinade and toss to coat. Let them marinate for about 20–30 minutes.

        Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated salmon, bell peppers, and red onion onto the skewers, alternating between the salmon and vegetables for a colorful presentation.

          Grill the Skewers: Lightly oil the grill grates or the grill pan to prevent sticking. Grill the skewers for about 8–10 minutes, turning occasionally, until the salmon is cooked through and flakes easily with a fork, and the vegetables are tender.
