Zesty Turkey Meatball and Orzo Soup

1 pound ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1/4 cup fresh parsley, chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 large egg

1 teaspoon dried oregano

Salt and pepper to taste

For the Soup:

1 tablespoon olive oil

1 medium onion, chopped

2 cloves garlic, minced

2 large carrots, diced

2 celery stalks, diced

8 cups chicken or vegetable broth

1 cup orzo pasta

1 can (14.5 oz) diced tomatoes with juice

1 teaspoon dried thyme

1/2 teaspoon crushed red pepper flakes (optional for heat)

Juice of 1 lemon

Salt and pepper to taste

Fresh parsley or basil for garnish

Instructions
 

Make the Turkey Meatballs:

    - In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, chopped parsley, onion, minced garlic, egg, dried oregano, salt, and pepper. Mix until just combined, being careful not to overwork the meat.

      - Form the mixture into small meatballs, about 1 inch in diameter. Place them on a plate and set aside.

        Prepare the Soup Base:

          - In a large pot, heat the olive oil over medium heat. Add the chopped onion, and sauté for 3-4 minutes until translucent.

            - Add the minced garlic, diced carrots, and celery, cooking for an additional 5 minutes until the vegetables start to soften.

              Cook the Meatballs:

                - Carefully add the turkey meatballs to the pot. Cook for about 5-7 minutes, turning gently until they are browned on all sides.

                  Add Broth and Pasta:

                    - Pour in the chicken or vegetable broth and bring to a boil. Stir in the orzo pasta, diced tomatoes, dried thyme, and crushed red pepper flakes (if using).

                      - Reduce the heat to a simmer and cook for about 10-12 minutes, or until the orzo is tender and meatballs are cooked through.
