1 lb large shrimp, peeled and deveined

2 tablespoons olive oil

Zest and juice of 2 limes

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

For the Coconut Rice:

1 cup jasmine rice

1 cup coconut milk

1 cup water

1 teaspoon sugar

1/2 teaspoon salt

Lime wedges (for serving)

For the Toppings:

1 avocado, sliced

1 cup cherry tomatoes, halved

1/4 red onion, thinly sliced

Sliced jalapeños (optional for heat)

Instructions
 

Prepare the Coconut Rice:

    - In a medium saucepan, combine the jasmine rice, coconut milk, water, sugar, and salt.

      - Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-18 minutes, or until the rice is fluffy and the liquid is absorbed. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork before serving.

        Marinate the Shrimp:

          - In a bowl, combine olive oil, lime zest, lime juice, minced garlic, cumin, chili powder, salt, and pepper.

            - Add the shrimp to the marinade, tossing to coat evenly. Let it marinate for about 15-20 minutes while you prepare the other ingredients.

              Cook the Shrimp:

                - Heat a large skillet over medium-high heat. Once hot, add the marinated shrimp in a single layer.

                  - Cook for 2-3 minutes on one side until they turn pink and opaque, then flip and cook for another 2-3 minutes on the other side. Be careful not to overcook.

                    Assemble the Bowls:

                      - In each bowl, layer a generous serving of coconut rice as the base.

                        - Top with the cooked shrimp, avocados, cherry tomatoes, red onion, and jalapeños if using.

                          Garnish and Serve:
