2 cups vegetable broth (or water)

1 tablespoon olive oil

1 clove garlic, minced

1 lime, juiced and zested

1/2 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1 cup black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 small red bell pepper, diced

1 avocado, sliced

1/4 cup crumbled feta cheese (optional)

Lime wedges and extra cilantro for serving

Cook the Rice: In a medium saucepan, combine the rice and vegetable broth (or water) over medium-high heat. Bring to a boil, then reduce to low heat, cover, and simmer for about 18-20 minutes (or until rice is tender and liquid is absorbed). Remove from heat and let it sit covered for 5 minutes. Fluff with a fork.

    Sauté Garlic: While the rice is cooking, heat the olive oil in a skillet over medium heat. Add the minced garlic and sauté for about 1 minute, or until fragrant but not browned.

      Combine Ingredients: Once the garlic is fragrant, add the cooked rice to the skillet. Stir in lime juice, lime zest, cilantro, ground cumin, salt, and black pepper. Mix well to combine all ingredients thoroughly.
