Ingredients

2 cups cooked chicken, shredded

1 cup BBQ sauce (your favorite brand)

1 cup corn kernels (fresh, frozen, or canned)

1 cup shredded cheese (cheddar or a Mexican blend)

1/2 red onion, finely chopped

1 bell pepper, diced (red or green)

1 tablespoon olive oil

8 flour tortillas (medium size)

1 teaspoon smoked paprika

1/2 teaspoon cumin

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions

Prepare the Chicken Mixture: In a mixing bowl, combine the shredded chicken, BBQ sauce, corn kernels, smoked paprika, cumin, salt, and pepper. Mix well until everything is evenly coated.

Sauté Vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped red onion and bell pepper. Sauté for about 4-5 minutes, or until the vegetables are softened and fragrant.

Combine: Add the chicken mixture to the skillet with the sautéed vegetables. Stir and cook for another 3-4 minutes, allowing flavors to meld together. Remove from heat.

Assemble the Quesadillas: Take a flour tortilla and place a generous amount of the chicken and corn mixture on one half. Sprinkle a handful of shredded cheese on top. Fold the tortilla over to create a half-moon shape.

Cook Quesadillas: Wipe down the skillet and add a little more olive oil if needed. Cook the quesadilla on medium heat for about 3-4 minutes on each side, or until golden brown and the cheese has melted.

Slice & Serve: Once cooked, remove from the skillet and let cool for a moment. Slice into wedges. Garnish with fresh cilantro and serve with sour cream or Greek yogurt on the side.

Enjoy: Dig into these delicious, zesty BBQ chicken and corn quesadillas for a satisfying meal that’s perfect for lunch, dinner, or game day snacks!
