1 cup farro

2 cups water or vegetable broth

1 large apple (such as Honeycrisp or Granny Smith), diced

1/2 cup walnuts, toasted and roughly chopped

1/2 cup dried cranberries or raisins

1/4 cup red onion, finely chopped

2 cups fresh arugula or spinach

1/4 cup feta cheese, crumbled (optional)

2 tablespoons olive oil

1 tablespoon apple cider vinegar

1 tablespoon maple syrup

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh thyme leaves for garnish (optional)

Instructions
 

Cook the Farro: In a medium saucepan, combine the farro and water (or vegetable broth). Bring to a boil, then reduce to a simmer, cover, and cook for about 25-30 minutes until the farro is tender but still chewy. Drain any excess liquid if necessary, then set aside.

    Prep the Ingredients: While the farro cooks, dice the apple, chop the walnuts, finely chop the red onion, and prepare the arugula or spinach.

      Toast the Walnuts: In a dry skillet over medium heat, add the walnuts. Toast for about 4-5 minutes, stirring frequently, until fragrant and lightly browned. Remove from heat and set aside.

        Make the Dressing: In a small bowl, whisk together the olive oil, apple cider vinegar, maple syrup, Dijon mustard, salt, and pepper until well combined.

          Combine the Salad: In a large mixing bowl, combine the cooked farro, diced apple, toasted walnuts, dried cranberries (or raisins), red onion, and arugula (or spinach). Pour the dressing over the salad and gently toss until all ingredients are evenly coated.
