Ingredients

4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

4 cups vegetable or chicken broth

1 cup heavy cream

1 cup shredded sharp cheddar cheese

4 slices of crispy bacon, crumbled (optional for garnish)

1/4 cup chopped fresh chives or green onions

2 teaspoons dried thyme

1 teaspoon smoked paprika

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

2 tablespoons olive oil or butter

Instructions

Sauté Veggies: In a large pot, heat the olive oil or butter over medium heat. Add the chopped onion and garlic, cooking for about 3-4 minutes until they become soft and translucent.

Cook Potatoes: Stir in the diced potatoes, thyme, smoked paprika, salt, and pepper. Cook for another 2 minutes, allowing the potatoes to absorb the flavors.

Add Broth: Pour in the vegetable or chicken broth. Bring the mixture to a gentle boil, then reduce heat to low. Cover the pot and simmer for about 20-25 minutes, or until the potatoes are tender.

Blend the Soup: Once the potatoes are cooked, use an immersion blender to puree the soup until it reaches your desired consistency. For a chunkier texture, blend only half of the soup and leave the rest as is.

Stir in Cream and Cheese: Gradually whisk in the heavy cream and shredded cheddar cheese, stirring until the cheese is melted and well combined. Taste and adjust seasonings if necessary.

Serve: Ladle the soup into bowls and top with crumbled bacon (if using), a sprinkle of chives or green onions, and an extra sprinkle of cheese for good measure.

Enjoy: Pair your Cozy Outback-Style Potato Soup with crusty bread or a fresh garden salad for a complete meal.
