1 medium butternut squash, peeled and diced

2 medium apples (preferably Granny Smith or Honeycrisp), cored and diced

1 large onion, diced

2 tablespoons olive oil

1 teaspoon ground cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon ground ginger

Salt and pepper to taste

1 cup vegetable broth (or chicken broth)

1/4 cup maple syrup

1/4 cup dried cranberries (optional)

1/4 cup chopped walnuts or pecans (for garnish)

Fresh thyme or parsley, for garnish

Prep the Vegetables: Begin by peeling and dicing the butternut squash into small cubes. Core and dice the apples. Make sure the pieces are uniformly sized for even cooking.
