Ingredients

1 cup cooked beets (peeled and chopped)

1 cup canned chickpeas (drained and rinsed)

2 tablespoons tahini

2 tablespoons olive oil

1 garlic clove (minced)

1 tablespoon lemon juice

Salt and black pepper to taste

4 slices of your favorite bread (sourdough or whole grain recommended)

Fresh herbs (such as dill or parsley) for garnish

Sesame seeds for garnish

Optional: sliced radishes or microgreens for topping

Instructions

Prepare the Beet Hummus: In a food processor, combine the cooked beets, chickpeas, tahini, olive oil, minced garlic, lemon juice, salt, and black pepper. Blend until smooth, scraping down the sides as needed. Adjust seasoning to taste—add more lemon juice or salt if desired.

Toast the Bread: While the hummus is blending, toast the bread slices until golden brown and crispy. You can use a toaster, oven, or skillet for this step.

Assemble the Toasts: Once the bread is toasted, spread a generous layer of the vibrant beet hummus over each slice.

Garnish: Top the hummus with fresh herbs, sesame seeds, and if you wish, add sliced radishes or microgreens for extra color and crunch.

Serve and Enjoy: Serve the toasts immediately as an appetizer or a delightful light meal. You can also enjoy it with a drizzle of olive oil on top for added richness.
