Veggie and Egg Breakfast Burrito Bites

4 large eggs

1/4 cup milk (dairy or non-dairy)

1/2 cup bell pepper, diced (any color)

1/2 cup zucchini, shredded

1/4 cup red onion, finely chopped

1/2 cup fresh spinach, chopped

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper, to taste

6 small flour tortillas (whole grain or gluten-free)

1/2 cup shredded cheese (cheddar or a cheese blend)

Olive oil or cooking spray, for greasing the pan

Optional toppings: salsa, avocado, chopped cilantro

Instructions
 

Preheat the oven to 375°F (190°C) and grease a muffin tin with cooking spray or a light coat of olive oil.

    In a mixing bowl, whisk together the eggs and milk until well combined. Stir in garlic powder, cumin, salt, and pepper to taste.

      In a skillet over medium heat, add a splash of olive oil. Add the diced bell pepper, zucchini, and red onion. Sauté for about 3-4 minutes, or until the veggies are slightly softened. Add the chopped spinach and cook for another minute until wilted. Remove from heat.

        Combine the sautéed veggies into the egg mixture and mix well.

          Cut tortillas into strips that are about 1 inch wide. You should get approximately 4-5 strips from each tortilla.

            Line each cup of the muffin tin with tortilla strips to create a cup, overlapping them slightly to cover the bottom and sides.

              Spoon the veggie and egg mixture into each tortilla cup, filling them about 3/4 full. Sprinkle shredded cheese evenly over the top of each.

                Bake in the preheated oven for 15-18 minutes, or until the egg is set and the cheese is bubbly and golden.

                  Remove from the oven and let the bites cool slightly for about 5 minutes before gently removing them from the muffin pan.

                    Serve warm with optional toppings like salsa, avocado slices, or fresh cilantro for garnish.
