1 cup all-purpose flour

2 large eggs

1 1/2 cups milk (whole or 2%)

2 tbsp granulated sugar

1 tsp pure vanilla extract

1/4 tsp salt

2 tbsp unsalted butter, melted (plus extra for the pan)

Powdered sugar and fresh fruit for serving (optional)

Instructions
 

Prepare the Batter: In a large mixing bowl, whisk together the flour, eggs, milk, granulated sugar, vanilla extract, and salt until the mixture is smooth and lump-free. Stir in the melted butter until fully incorporated. The batter should be slightly thinner than pancake batter; if it seems too thick, add a splash more milk.

    Chill the Batter: Cover the bowl with plastic wrap and let the batter rest in the fridge for at least 30 minutes. This allows the gluten to relax, making for more tender crepes.

      Heat the Pan: Preheat a nonstick skillet or crepe pan over medium heat. Lightly brush the pan with melted butter.

        Cook the Crepes: Pour about 1/4 cup of the batter into the center of the hot pan. Quickly tilt and swirl the pan to spread the batter evenly into a thin circle. Cook for 1-2 minutes or until the edges start to lift and the bottom has a light, golden color.

          Flip the Crepe: Carefully slide a spatula under the crepe and flip it over. Cook for another 1 minute until the second side is lightly browned. Remove the crepe from the pan and place it on a plate. Repeat the process with remaining batter, stacking the crepes on the plate as you go. If desired, keep the cooked crepes warm in a low oven.
