For the BBQ Mac and Cheese:

1 cup macaroni pasta

2 cups sharp cheddar cheese, shredded

1 cup smoked gouda cheese, shredded

2 cups milk

1/4 cup butter

1/4 cup all-purpose flour

1/2 cup BBQ sauce (your favorite kind)

1/2 tsp garlic powder

1/2 tsp onion powder

Salt and pepper to taste

For the Burgers:

1 lb ground beef (80/20 blend for flavor)

1/2 tsp salt

1/2 tsp black pepper

4 hamburger buns

4 slices of crispy bacon (optional)

Lettuce leaves

Sliced tomatoes

Additional BBQ sauce for drizzling

Instructions
 

Cook the Macaroni:

    - Bring a large pot of salted water to a boil. Add the macaroni and cook according to package instructions until al dente. Drain and set aside.

      Make the Cheese Sauce:

        - In a medium saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 2 minutes until golden and bubbly (this is your roux).

          - Slowly add the milk, whisking constantly to prevent lumps. Continue to whisk until the mixture thickens (about 5 minutes).

            - Stir in the garlic powder, onion powder, salt, and pepper.

              - Remove from heat and add the shredded cheddar and gouda cheese, stirring until melted and smooth.

                - Mix in the cooked macaroni and barbecue sauce until well combined. Set aside to cool slightly.

                  Prepare the Burgers:

                    - In a large bowl, gently combine the ground beef, salt, and pepper. Form into four equally-sized patties, making a slight indentation in the center of each burger to prevent them from puffing up during cooking.

                      - Preheat a grill or skillet over medium-high heat. Cook the burgers for about 4-5 minutes on each side for medium doneness, or until they reach your desired level of doneness.

                        Assemble the Burger:

                          - Toast the hamburger buns lightly on the grill or skillet.

                            - Place a lettuce leaf on the bottom half of each bun, followed by a slice of tomato.

                              - Top with a cooked beef patty, followed by a generous scoop of BBQ mac and cheese.

                                - If using, add crispy bacon, then drizzle additional BBQ sauce on top before placing the bun lid.

                                  Serve:
