Ingredients

8 oz elbow macaroni

2 cups whole milk

1 cup heavy cream

2 cups shredded aged white cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup grated parmesan cheese

4 tablespoons unsalted butter

1/4 cup all-purpose flour

2 cloves garlic, minced

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and black pepper to taste

1 cup sun-dried tomatoes, chopped

1/2 cup fresh spinach, chopped

2 tablespoons truffle oil (more if desired)

Fresh basil leaves for garnish

Instructions

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

Make the Cheese Sauce: In a medium saucepan over medium heat, melt the butter. Whisk in the flour and cook for about 2 minutes until slightly golden, creating a roux. Gradually whisk in the milk and heavy cream, bringing it to a simmer.

Add Cheese: Once the sauce is simmering, lower the heat and add the aged white cheddar, mozzarella, and parmesan cheese. Stir until the cheese is fully melted and the sauce is smooth. Season with minced garlic, Italian seasoning, red pepper flakes, salt, and black pepper.

Combine Ingredients: In a large mixing bowl, combine the cooked macaroni, cheese sauce, sun-dried tomatoes, chopped spinach, and truffle oil. Mix well until the pasta is evenly coated with the sauce.

Bake the Dish: Preheat your oven to 350°F (175°C). Transfer the mixture to a greased baking dish. If desired, sprinkle additional mozzarella and parmesan on top for a cheesy crust.

Final Bake: Bake in the preheated oven for 25-30 minutes or until the top is golden and bubbling.

Serve: Remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves before serving for a pop of color and flavor.
