Turkey Skewers with Peach Salsa

For the Turkey Skewers:

1.5 lbs turkey breast, cut into 1-inch cubes

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper, to taste

8-10 wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

For the Peach Salsa:

2 ripe peaches, diced (about 1.5 cups)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

1 jalapeño, seeded and finely diced (adjust based on heat preference)

Juice of 1 lime

Salt, to taste

Prepare the Turkey Marinade: In a large bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, dried oregano, salt, and pepper. Add the turkey breast cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes (up to overnight for better flavor).

    Make the Peach Salsa: In a separate bowl, combine the diced peaches, red onion, cilantro, jalapeño, and lime juice. Stir gently to combine, and season with salt to taste. Let it sit for at least 15 minutes to allow the flavors to meld.

      Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated turkey pieces onto the skewers, leaving a little space between each piece.
