1 lb ground turkey

1 tablespoon olive oil

1/2 cup red onion, finely chopped

2 cloves garlic, minced

1 cup cherry tomatoes, halved

1/2 cup shredded carrots

1 cup cucumber, diced

1/2 teaspoon smoked paprika

1 teaspoon dried ranch seasoning mix (or homemade ranch seasoning)

Salt and pepper to taste

1 head of butter lettuce (or romaine), leaves separated

1/2 cup shredded cheese (cheddar or your favorite)

Optional: sliced avocado, fresh cilantro, and lime wedges for serving

Cook the Turkey: In a large skillet, heat olive oil over medium heat. Add the chopped red onion and sauté for 2-3 minutes until softened. Add the minced garlic and cook for an additional minute until fragrant.
