Turkey Bacon Breakfast Quesadillas

4 large flour tortillas

8 slices of turkey bacon

1 cup shredded cheddar cheese

1 cup scrambled eggs (about 4 large eggs)

½ cup diced bell peppers (mixed colors)

¼ cup finely chopped red onion

1 tablespoon olive oil

½ teaspoon garlic powder

½ teaspoon paprika

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Salsa or hot sauce, for serving

Cook the Turkey Bacon: In a large skillet over medium heat, cook the turkey bacon until crispy, about 6-8 minutes. Remove from the skillet and drain on paper towels. Once cool, chop into bite-sized pieces.

    Sauté Vegetables: In the same skillet, add olive oil. Sauté the diced bell peppers and chopped red onion for 3-4 minutes until they are soft and fragrant. Season with garlic powder, paprika, salt, and pepper. Set aside.

      Scramble the Eggs: In a bowl, whisk together the eggs with a pinch of salt and pepper. In the same skillet, add a little more oil if needed, and scramble the eggs until just set. Stir in the cooked turkey bacon and sautéed vegetables, ensuring everything is well combined. Remove from heat.

        Assemble the Quesadillas: Heat a clean skillet over medium heat. On half of each tortilla, layer a sprinkle of cheddar cheese, followed by a generous portion of the egg mixture, and then top with more cheese before folding the tortilla in half.

          Cook Quesadillas: Place the folded quesadilla in the preheated skillet. Cook for about 3-4 minutes on each side or until the tortillas are golden brown and the cheese has melted. Repeat with the remaining tortillas.

            Slice and Serve: Remove from the skillet, let cool for a minute, then slice into wedges. Serve warm garnished with fresh cilantro, along with salsa or hot sauce on the side for dipping.
