Tuna Tacos with Lime Slaw

For the Tuna:

1 lb fresh sushi-grade tuna, diced

2 tablespoons soy sauce

1 tablespoon sesame oil

1 teaspoon sriracha (adjust for spice level)

1 teaspoon honey

1 teaspoon grated fresh ginger

1 avocado, diced

1 tablespoon chopped fresh cilantro

For the Lime Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 carrot, julienned

1/4 cup fresh lime juice

2 tablespoons olive oil

1 teaspoon honey

Salt and pepper to taste

For Assembly:

8 small corn tortillas

Extra lime wedges for serving

Additional cilantro for garnish

Prepare the Tuna:

    In a mixing bowl, combine the diced tuna, soy sauce, sesame oil, sriracha, honey, and grated ginger. Mix gently to coat the tuna without mashing it. Cover and refrigerate for about 15 minutes to allow the flavors to meld.

      Make the Lime Slaw:

        In a large bowl, combine the green cabbage, red cabbage, and grated carrot. In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and pepper. Pour the dressing over the cabbage mixture and toss well to evenly coat. Set aside to let the flavors develop.

          Prepare the Tortillas:

            Heat a dry skillet or griddle over medium heat. Warm the corn tortillas for about 30 seconds on each side, until pliable. Keep them wrapped in a clean kitchen towel to stay warm.

              Assemble the Tacos:

                Take a warm tortilla and spoon a generous amount of the marinated tuna onto the center. Add a scoop of the lime slaw, followed by a few pieces of diced avocado. Garnish with chopped cilantro and a squeeze of fresh lime juice.
