Tuna Skewers with Mango Salsa

For the Tuna Skewers:

1 lb (450g) fresh sushi-grade tuna, cut into 1-inch cubes

2 tablespoons olive oil

2 tablespoons soy sauce

1 tablespoon honey

1 teaspoon sesame oil

1 teaspoon garlic powder

1 teaspoon ginger powder

Salt and pepper, to taste

Bamboo skewers (soaked in water for 30 minutes)

For the Mango Salsa:

1 ripe mango, diced

1/2 red bell pepper, finely chopped

1/4 red onion, finely chopped

1/2 jalapeño, finely chopped (seeds removed for less heat)

Juice of 1 lime

2 tablespoons fresh cilantro, chopped

Salt, to taste

Marinate the Tuna: In a mixing bowl, combine olive oil, soy sauce, honey, sesame oil, garlic powder, ginger powder, salt, and pepper. Add the tuna cubes and gently toss until all pieces are coated. Let marinate for at least 15 minutes in the refrigerator.

    Prepare the Mango Salsa: In a separate bowl, combine the diced mango, red bell pepper, red onion, jalapeño, lime juice, cilantro, and salt. Mix well and set aside to allow the flavors to meld.

      Assemble the Skewers: Preheat your grill or grill pan over medium-high heat. Thread the marinated tuna cubes onto the soaked bamboo skewers, leaving a little space between each piece to ensure even cooking.

        Grill the Skewers: Place the skewers on the grill. Cook for about 2-3 minutes on each side for rare to medium-rare doneness, depending on your preference. Do not overcook, as tuna can become dry.
