2 ripe avocados

1 can (5 oz) of tuna in water, drained

1/4 cup Greek yogurt or mayonnaise (your choice)

1 tablespoon Dijon mustard

1 tablespoon lemon juice (freshly squeezed)

1/4 cup red onion, finely chopped

1/4 cup celery, finely diced

1/4 cup red bell pepper, diced

Salt and pepper, to taste

Fresh parsley or cilantro, for garnish

Optional: cherry tomatoes, halved (for extra garnish)

Prepare the Avocados: Cut the avocados in half and remove the pits. Scoop out a little bit of the flesh to create a larger cavity for the tuna salad, and set aside in a bowl.
