Ingredients

2 cups cooked jasmine rice (preferably day-old)

1 ripe pineapple, cored and diced into small chunks

1/2 cup peas (fresh or frozen)

1/2 cup diced red bell pepper

1/2 cup diced green bell pepper

1/2 cup chopped green onions (white and green parts)

1/4 cup raisins or dried cranberries

2 cloves garlic, minced

2 tablespoons soy sauce (or tamari for a gluten-free option)

1 tablespoon fish sauce (optional)

1 tablespoon sesame oil

2 tablespoons coconut oil (or vegetable oil)

1 teaspoon freshly grated ginger

Salt and pepper to taste

1/4 cup chopped fresh cilantro (for garnish)

Lime wedges (for serving)

Instructions

Prepare Ingredients: Start by gathering and prepping all your ingredients. Make sure the pineapple is cored, peeled, and cut into small chunks. Having day-old rice moisturized will help avoid mushiness in your fried rice.

Heat the Pan: In a large skillet or wok, heat coconut oil over medium-high heat. Once hot, add garlic and ginger, stirring quickly to avoid burning.

Add Vegetables: Next, add the diced bell peppers and peas to the skillet. Stir-fry for about 2-3 minutes until the veggies soften but remain vibrant.

Incorporate Pineapple: Toss in the diced pineapple and raisins (or dried cranberries). Cook for an additional 3-4 minutes until the pineapple starts to caramelize slightly and release its juices.

Fry the Rice: Add the cooked jasmine rice to the skillet, breaking up any clumps. Mix thoroughly, adding soy sauce, fish sauce (if using), and sesame oil. Stir-fry everything together for about 5 minutes, ensuring that the rice heats through and gets incorporated well with the flavors.

Season and Garnish: Season with salt and pepper to taste. Be sure to sprinkle in chopped green onions and mix well. Remove from heat and garnish with fresh cilantro.

Serve: Serve your Tropical Pineapple Fried Rice warm, with lime wedges on the side for an extra zing. Enjoy!
