1 ½ cups graham cracker crumbs

½ cup unsweetened shredded coconut

½ cup unsalted butter, melted

1 can (14 oz) sweetened condensed milk

1 cup heavy whipping cream

½ cup cream of coconut (like Coco Lopez)

1 teaspoon vanilla extract

1 cup diced fresh pineapple

1 ripe banana, sliced

1 cup diced mango

1 lime, zested and juiced

Fresh mint leaves, for garnish

Prepare the Crust: Preheat the oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, shredded coconut, and melted butter. Mix until well blended. Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Bake for 8-10 minutes until golden. Remove and let it cool completely.

    Make the Filling: In a large bowl, whisk together the sweetened condensed milk, heavy whipping cream, cream of coconut, vanilla extract, lime juice, and lime zest until smooth and well combined.

      Add Fruit: Gently fold in the diced pineapple, banana slices, and mango. Make sure the fruit is evenly distributed throughout the filling.

        Assemble the Pie: Pour the fruit mixture into the cooled graham cracker crust, smoothing it out evenly.
