Ingredients

1 cup coconut milk (or almond milk)

1/4 cup chia seeds

2 tablespoons honey or maple syrup (adjust for sweetness)

1 teaspoon vanilla extract

1 ripe mango, diced (reserve some for garnish)

1/2 banana, sliced (for garnish)

Fresh mint leaves (for garnish)

Toasted coconut flakes (optional, for garnish)

Instructions

Prepare the Base: In a medium bowl, whisk together the coconut milk, honey (or maple syrup), and vanilla extract until well combined.

Add Chia Seeds: Stir in the chia seeds to the coconut milk mixture. Make sure the seeds are well distributed to prevent clumping.

Rest and Thicken: Cover the bowl and let the mixture sit in the refrigerator for at least 2 hours, or overnight if possible. This will allow the chia seeds to absorb the liquid and create a thick, pudding-like consistency.

Prepare the Mango: While the pudding is thickening, peel and dice the ripe mango. Reserve a few pieces for garnishing later.

Combine Mango and Pudding: Once the pudding has thickened, gently fold in the diced mango until evenly distributed throughout the mixture.

Serve: Spoon the mango chia pudding into serving bowls or glasses. Top each serving with sliced banana, reserved mango pieces, fresh mint leaves, and toasted coconut flakes if using.

Enjoy: Serve immediately, or cover and store in the refrigerator for up to 3 days.
