2 medium zucchinis, spiralized or sliced into thin ribbons

3 large ripe tomatoes, diced

2 cloves garlic, minced

1 small onion, finely chopped

1 cup cherry tomatoes, halved

1/4 cup fresh basil leaves, chopped

1/4 cup extra virgin olive oil

1 teaspoon red pepper flakes (optional)

Salt and pepper to taste

1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan option)

8 oz pasta of your choice (spaghetti, penne, or gluten-free)

Instructions
 

Cook the Pasta: Start by boiling a large pot of salted water. Add the pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain and set the pasta aside.

    Sauté Onions and Garlic: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent. Then add the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.

      Add Tomatoes: Stir in the diced tomatoes and cherry tomatoes. Season with salt and pepper. Cook for about 5-7 minutes, allowing the tomatoes to soften and release their juices.

        Incorporate Zucchini: Add the spiralized or sliced zucchini to the skillet and toss gently to combine. Cook for another 3-4 minutes, just until the zucchini is tender but still slightly crisp.

          Combine with Pasta: Add the cooked pasta to the skillet. Pour in a bit of the reserved pasta water (a couple of tablespoons at a time) to help create a light sauce. Toss everything together until well combined.

            Finish with Basil: Remove the skillet from heat and stir in the chopped basil and Parmesan cheese. Adjust seasoning with more salt and pepper if needed.

              Serve: Plate the pasta in bowls, drizzling with a little more olive oil if desired, and garnish with additional basil and cheese on top.
