2 medium zucchinis, sliced into thin rounds

3 large ripe tomatoes, sliced into thin rounds

1 medium onion, finely chopped

3 cloves garlic, minced

1 cup grated mozzarella cheese

1/2 cup grated Parmesan cheese

1 tablespoon fresh basil, chopped

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

1 cup breadcrumbs (Italian-style recommended)

Optional: Fresh basil leaves for garnish

Preheat your oven: Preheat your oven to 375°F (190°C).

    Prepare the vegetables: In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the garlic and cook for an additional minute until fragrant.

      Layer the vegetables: In a greased 9x13 inch baking dish, layer the sliced zucchinis and tomatoes. Alternate the layers, placing some of the sautéed onion and garlic mixture among the layers. Sprinkle with salt, black pepper, chopped basil, and oregano as you layer.

        Add the cheese: Once the vegetable layers are complete, evenly sprinkle the grated mozzarella cheese over the top. Follow with the grated Parmesan cheese.

          Prepare the topping: In a small bowl, mix the breadcrumbs with a tablespoon of olive oil until lightly coated. Spread the breadcrumb mixture evenly over the cheese layer.

            Bake the gratin: Cover the baking dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.
