2 medium ripe tomatoes, diced

1 medium ripe peach, diced (preferably yellow or white)

1/4 cup red onion, finely chopped

1/4 cup fresh basil leaves, sliced thinly

1 tablespoon balsamic vinegar

1 tablespoon olive oil

Salt and pepper to taste

1 baguette or ciabatta loaf, sliced into 1/2-inch thick slices

Optional: 1/2 teaspoon garlic powder or 1 clove garlic, halved (for rubbing)

Prep the Topping: In a mixing bowl, combine the diced tomatoes, diced peach, chopped red onion, and sliced basil. Drizzle with balsamic vinegar and olive oil. Season with salt and pepper to taste. Gently stir to combine all ingredients. Allow the mixture to sit for about 10-15 minutes to enhance the flavors while you prepare the bread.

    Toast the Bread: Preheat your oven broiler. Arrange the sliced baguette or ciabatta on a baking sheet. Brush lightly with olive oil on both sides. Toast in the broiler for about 2-3 minutes on each side or until golden brown and crispy. Keep an eye on them to prevent burning.
