Tomato Basil Couscous Salad

Ingredients
  

1 cup couscous

1 ½ cups vegetable broth or water

2 cups cherry tomatoes, halved

1 cup fresh basil leaves, chopped

1 small red onion, finely diced

1 cucumber, diced

1/4 cup extra-virgin olive oil

2 tablespoons lemon juice (freshly squeezed)

1 teaspoon garlic powder

Salt and black pepper, to taste

Optional: 1/2 cup feta cheese, crumbled

Instructions
 

Cook the Couscous:

    In a medium saucepan, bring the vegetable broth or water to a boil. Remove from heat and stir in the couscous. Cover the pot and let it sit for about 5 minutes until the couscous absorbs the liquid. Fluff with a fork and let it cool.

      Prepare the Vegetables:

        While the couscous is cooling, wash and prepare the cherry tomatoes, cucumber, and red onion by dicing them into bite-sized pieces. Place them in a large mixing bowl.

          Mix the Dressing:

            In a small bowl, whisk together the olive oil, lemon juice, garlic powder, salt, and black pepper. Adjust the seasoning to taste.

              Combine Ingredients:

                Once the couscous has cooled, add it to the bowl of chopped vegetables. Drizzle the dressing over the salad and toss gently to combine. Be careful not to crush the tomatoes.

                  Add Fresh Basil:

                    Fold in the chopped basil leaves, ensuring they are evenly distributed throughout the salad.

                      Finish and Serve:
