Ingredients

2 cups cooked chicken, shredded or diced

1 cup shredded Mexican blend cheese (cheddar, Monterey jack, etc.)

1/2 cup black beans, drained and rinsed

1/2 cup corn kernels (fresh, frozen, or canned)

1/4 cup red bell pepper, finely diced

1/4 cup green onion, chopped

1/4 cup fresh cilantro, chopped (optional)

1 teaspoon chili powder

1 teaspoon cumin

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

6 large flour tortillas

1/4 cup sour cream (for serving)

1/4 cup salsa (for serving)

Olive oil or cooking spray (for frying)

Instructions

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, Mexican blend cheese, black beans, corn, red bell pepper, green onion, and cilantro. Sprinkle in the chili powder, cumin, garlic powder, onion powder, and season with salt and pepper to taste. Mix until all ingredients are well incorporated.

Assemble the Rollups: Lay out a tortilla on a clean surface. Spoon approximately 1/3 cup of the filling mixture onto one side of the tortilla, spreading it in a line. Roll the tortilla tightly from the filled side to the edge, creating a rollup. Repeat with the remaining tortillas and filling.

Prepare to Cook: Heat a large skillet over medium heat and add a drizzle of olive oil or spray with cooking spray. Once hot, place the rollups seam-side down in the skillet.

Cook the Rollups: Cook for about 3-4 minutes on each side or until golden brown and crispy. Be careful not to overcrowd the skillet; you can cook in batches if necessary.

Serve: Once cooked, remove the rollups from the skillet and let them cool slightly before slicing them into pinwheels or halves. Serve with a side of sour cream and salsa for dipping.

Enjoy: These crispy Tex-Mex Chicken Quesadilla Rollups are perfect as an appetizer or a meal. Dig in and savor the flavors!
