Tex-Mex Chicken & Black Bean Tortilla Stack

2 cups cooked chicken, shredded

1 can (15 oz) black beans, rinsed and drained

1 cup corn (fresh, frozen, or canned)

1 cup salsa

1 cup shredded cheese (cheddar or a blend)

6 large flour tortillas

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1/2 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Sliced jalapeños (optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Mixture: In a large mixing bowl, combine the shredded chicken, black beans, corn, salsa, chili powder, cumin, garlic powder, onion powder, salt, and black pepper. Stir until well mixed.

      Layering the Stack: Take a large baking dish (about 9x13 inches) and spread a thin layer of the chicken and bean mixture on the bottom. Place a tortilla over the mixture, allowing it to cover the bottom. Spread another layer of the mixture over the tortilla, followed by a sprinkle of shredded cheese.

        Repeat Layers: Place another tortilla over the cheese layer and repeat the process. Continue layering until all ingredients are used up, making sure the top layer is a tortilla topped with cheese.

          Bake: Cover the dish with aluminum foil (to prevent cheese from burning) and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and slightly golden.

            Serving: Remove from the oven and let it cool for about 5 minutes. To serve, cut the tortilla stack into squares. Serve with sour cream, a sprinkle of fresh cilantro, and sliced jalapeños on top, if desired.
