Ingredients

1 lb chicken breasts, sliced into bite-sized pieces

1/4 cup coconut aminos

2 tablespoons honey or maple syrup

2 tablespoons rice vinegar

2 cloves garlic, minced

1 teaspoon fresh ginger, grated

1 tablespoon sesame oil

1 tablespoon cornstarch

1/4 cup water

Sesame seeds, for garnish

2 green onions, sliced, for garnish

Steamed rice or quinoa, for serving

Mixed veggies (bell peppers, broccoli, snap peas), for stir-frying

Instructions

Marinate the Chicken: In a medium bowl, combine coconut aminos, honey or maple syrup, rice vinegar, minced garlic, grated ginger, and sesame oil. Add the chicken pieces to the marinade and toss until thoroughly coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

Prepare the Sauce: In a small bowl, mix cornstarch with water to create a slurry. Add this to the leftover marinade and stir to combine.

Cook the Chicken: Heat a large skillet or wok over medium-high heat. Add the marinated chicken (discard the marinade, or reserve it for later use). Cook for 5-7 minutes until the chicken is browned and cooked through, stirring occasionally.

Add Vegetables: While the chicken is cooking, prepare your mixed veggies. Once the chicken is done, add the vegetables to the skillet and stir-fry for about 3-4 minutes until they are tender yet crisp.

Thicken the Sauce: Pour the slurry into the skillet with the chicken and vegetables. Cook for an additional 1-2 minutes, stirring until the sauce thickens and coats the chicken and veggies evenly.

Serve: Remove from heat and plate the teriyaki chicken with veggies over steamed rice or quinoa. Garnish with sesame seeds and sliced green onions for a fresh touch.
