1 lb (450g) boneless, skinless chicken thighs

2 tablespoons vegetable oil

Salt and pepper to taste

For the Teriyaki Sauce:

1/4 cup soy sauce

2 tablespoons mirin (Japanese sweet rice wine)

1 tablespoon sake (or substitute with additional mirin)

2 tablespoons brown sugar

1 teaspoon grated fresh ginger

1 teaspoon minced garlic

1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)

For the Rice Bowls:

2 cups cooked jasmine rice (or any preferred rice)

1 cup steamed broccoli florets

1/2 cup shredded carrots

1/4 cup chopped green onions

Sesame seeds for garnish

Pickled ginger (optional)

Instructions
 

Prepare the Chicken:

    - Pat the chicken thighs dry with a paper towel. Season both sides with salt and pepper.

      - Heat the vegetable oil in a large skillet or frying pan over medium-high heat. Once hot, add the chicken thighs and cook for about 5-6 minutes on each side or until they are cooked through and golden brown. Remove from the pan and let them rest for a few minutes, then slice them into bite-sized pieces.

        Make the Teriyaki Sauce:
