1 lb (450g) boneless, skinless chicken thighs, diced

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, grated

1/4 cup soy sauce (low sodium recommended)

2 tablespoons honey or maple syrup

1 tablespoon rice vinegar

1 tablespoon mirin (optional)

1 teaspoon sesame oil

1 cup water chestnuts, diced

2 green onions, thinly sliced

1/4 cup chopped cilantro (optional)

1 head of butter or romaine lettuce, leaves separated

Sesame seeds, for garnish

Instructions
 

Prepare the Marinade: In a bowl, whisk together soy sauce, honey, rice vinegar, mirin, ginger, and garlic. Set aside.

    Cook the Chicken: Heat vegetable oil in a large skillet over medium-high heat. Add the diced chicken thighs and cook until browned on all sides, about 6-8 minutes.

      Add Flavor: Pour the marinade over the chicken in the skillet. Bring to a simmer and let it cook for an additional 5-7 minutes, stirring occasionally, until the chicken is cooked through and the sauce has thickened slightly.

        Finish the Filling: Stir in the diced water chestnuts and cook for another 2 minutes. Remove from heat and drizzle with sesame oil.

          Prepare Lettuce Cups: Lay out the lettuce leaves on a serving platter or individual plates. Spoon the teriyaki chicken mixture into each leaf.
